Passion leads us in all the things we do. Wine is the result of the harmonious relation between man and nature. A fertile soil and perfect climate conditions would not be enough, in fact, if passion did not lead the winegrower and winemaker's hands.
It is indeed our hands which make the difference in our winery together with a strong respect for tradition. We use our hands starting from the manual harvest in crates, with the grapes cooled in our caves lying under the castle, delicately treated with a soft pressing and with patience in order to enhance the quality of the work done and the grapes, to disgorgement also manually made, bottle after bottle, with a strict control of this process.
The secret of a high quality production lies in the ability of combining tradition and innovation in the right measure, in trying to put to use in the present time the teachings and the strictness handed down over generations with the help of the precious discoveries in the enology research.
Nature without any compromises: a nectar made with absolute expressive freedom comes from our vineyards. Nothing else but grapes and the soil where they grow. A particular climate, manual harvest, the strictness in following the 'Metodo Classico' and the idea of a wine created without following any prescribed rules: this is how Zero was born. It mirrors our identity defined by purity, it is a Pas Dosé without any addition of sugar and sulfites when disgorgement takes place.
